We did what you propose last spring.  First-go to www.greecetravel.com   
Matt Barrett's website with more information than you can possibly 
assimilate.  BUT the important thing I learned there is to get a Greek 
travel agent.  Otherwise you will not know the correct schedules for ferry's 
etc.  We used Uli with dolphin hellas agency.  She was wonderful.  e-mail 
her directly at uli at dolphin-hellas.gr.
We had more time, but did a combination of high speed ferries and flights 
between islands.  With five days, I'd probably fly.
