[Idyllchat] Cheesemaking

My husband and I are having a debate about how long the Alpkase is aged. I've 
been searching on the web but have been unable to find information that 
specific.

Does anyone know how long the cheese made in the upper meadows ages before it 
is sold/eaten? To make it easy (I know there are lots of different kinds of 
cheese) let's limit this to the farmer's cheese made by hand and sold locally.
