Several years ago while in Switzerland, we bought an interesing looking cheese knife. Later when using it, we were delighted with the way it cut cheese as well as fruits and vegetables. I think the reason for the good cutting is the highly polished, stainless steel surface. The holes in the blade may also contribute. Last month when on another Swiss Untour, we made a special effort to obtain more knives and were successful. We got 8 knives from Zuercher, Milk and Dairy Shop, Freienhofgasse in Thun.
The cost was about 7 Sfr each. So, if you are looking for an excellent cheese knife, here is where you can find one. Good hunting.
