Swimming pools?  None that I've seen!  I doubt there is  a way to build one 
in the hills in and "far" around St. Goar. You'll see  why if you get there.  
However, St. Goar can be terrific.  Most  tourist traffic comes throughout the 
day as almost all the boat day trippers  stop.  A number of the multi-night 
cruise lines also stop for very,  very short visits although you probably won't 
see a stop in St. Goar on an  itinerary. .  The evenings are very quiet.  If 
there is a "night bar  life", I never saw it during several 3-4 night stays. 
There are several nice  places to eat and have a very satisfying meal.  There 
are two small grocery  stores about a 10 minute or less walk from the 
apartments. A trip up to the  dining room of Rhinefels castle might be as close as you 
would get to a gourmet  meal though and that can be iffy.  You'll get a very 
good meal but  "gourmet" might be a stretch.  I never stayed in an Untours 
apartment in  St. Goar.  For my short stays, I opted instead for the very nice  
comfortable Hotel Hauser, just up the street from the Christmas apartments and  
next to the Church.  A room with a large balcony overlooking the Rhine was  28 
Euros per night including a very good breakfast.  How close was the  Rhine?  
In my younger days, I could have thrown a rock into the water from  the 
balcony.  How close are the Christmas apartments to the Rhine?   About the same 
distance. Koblenz is about 30 minutes away with a fairly  good number of small 
towns in between.  Same distance and time to Mainz in  the other direction with 
another nice group of towns to visit.
The train station is just behind the Church and very convenient.  I  would 
guess a 5 minute walk from the Untours apartments. If your apartment train  
tickets are good on the day trip boats that might be fun if you're going  
downstream.  Going downstream there is traveling North by the way.   Seems odd, but 
that is how it works.
By all means, go.  You can always swim at home.
