My wife, Jane, has already replied to you, so I will simply fill in a few things I think you should consider.
One of my favorite sites in Paris is the cathedral Ste. Chapelle. It is inside the Department of Justice, which makes it difficult to find, but it is well worth finding. Beautiful stained glass windows!
The Cluny Museum of Antiquities is great, too, if you like old Roman stuff (we do).
Jane said the restaurant L'Escure is very good, and it is. It is on Rue Mondovi, near the Place de Concorde. Inexpensive and tasty.
Untours recommended a restaurant in the 9th Arrondissment called Chez Vincent. We loved it, but we stayed in the Martyrs Apartment, so we were only 2 blocks away. I don't know where your apt. is, so this may be a long trip for you.
There is a chain of 5 or 6 restaurants in Paris called Chez Clement. One of them is on the Champs Elysees, about in the middle of the really touristy section, but we found it was reasonably priced and the food was excellent.
If you have never been to Paris before, take one of the red or yellow tourist buses for a day or a half day. You will get a quick overview of the city and then you can decide what you want to go back to see. The buses are a little pricey, but worth it for one day, as you can get on and off wherever you want for the day.
What to do at night? You will find Paris one of the best and safest cities in the world to walk anytime of the day or night.
Go to the Eiffel Tower at night and see it lighted. Go to the Hotel d' Ville and just enjoy the lights and the kids rollerblading there.
In short, walk wherever you want, stop and enjoy a coffee or a glass of wine, then walk some more.
You are in for a treat. We have been to Europe 14 or 15 times and, in my opinion, Paris is the best of the best.
Bruges is also a wonderful city to explore. It is nowhere near the size or magnificence of Paris, but it is a grand place to spend a few days or a week. We heartily recommend the Hotel Adonais there.

I'm getting very excited. We leave in 2 weeks; 9/19-10/4. I thought I'd see if anyone has any restaurants, or boulangeries they love. We are staying at the Convention apartment. Also, how did you fill your evenings? We would like to catch a ballet or opera; does anyone have any experience? Concerts? Cinema would be fun, but I doubt they use English subtitles ;) My travel companion will be turning 50 while we are there so if there is a special restaurant, that won't break the bank, I would love your recommendations. We do plan to catch the candlelit evening at Vaux-de-Vicomte.
After Paris, on to Bruges. Any must sees? Where shall I buy chocolate and can I bring it home???
